Gâteau aux carottes sans gluten


  • Oranges 2
  • Carrots 3
  • Eggs 4
  • Rice flour 140 g
  • Coconut sugar 130 g
  • Applesauce 100 g
  • Cornstarch 40 g
  • Powdered almonds 20 g
  • Raisins 5 tablespoons
  • Gluten-free yeast 2 teaspoons
  • Icing sugar


Take the zest from the oranges (reserve) and squeeze the juice. Peel, wash and grate the carrots. Put them in a salad bowl, then pour the orange juice over them.

In another salad bowl, beat the eggs into an omelette. Add the coconut sugar and compote. Mix then add the rice flour, cornstarch, yeast, almond powder and raisins. Add the orange zest and grated carrots.

Pour the resulting dough into a cake mold or springform pan, covered with baking paper. Bake at 180°C for 50 minutes. Let cool, then sprinkle with icing sugar and enjoy the gluten-free carrot cake.
