Farce mousseline de volaille

 

The fish or poultry mousseline stuffing can also be molded into dumplings or in a piping bag and served as an accompaniment to a dish such as poached chicken or as an appetizer.

Depending on how you will use it, you can also add small pieces of truffles or steamed vegetables. The result when cut will be even more pleasing to the eye.
