RÖSTIS DE COURGETTES, SAUMON FUMÉ, SAUCE AU YAOURT & HERBES



  • 1,1 lbs zucchini
  • 1 egg
  • 40 GR (0,088 lbs) Parmesan
  • 40 g (0,088 lbs) flour
  • 125 g (0,27 lbs) Greek yogurt
  • 1 bunch chives
  • 4 slices smoked salmon
  • salt and pepper

 

Wash the courgettes and grate them with a coarse grater. Let drain in a colander for 15 minutes.

Put the grated zucchini in a bowl and add the egg, flour, grated parmesan, salt and pepper. Mix everything well then place in a heap on a baking sheet lined with baking paper.

Flatten slightly to form patties then bake for 20 minutes at 180°C-352, turning halfway through cooking.

Mix the yogurt with the chopped chives. Add salt and pepper. Serve the zucchini patties hot or cold with the smoked salmon and yogurt sauce.
