Velouté de légumes

 


  • 2 or 3 carrots
  • 1 or 2 tomatoes
  • 2 or 3 potatoes 
  • 1 to 4 sprigs of flat-leaf parsley
  • ½ stalk of celery 
  • 1 tsp coarse salt
  • 5  white leek 
  • 3 turns of the pepper mill
  • ½ medium onion 
  • 20 g (0,044 lbs) very cold butter
  • 1 medium garlic clove


Introduce the washed vegetables, peeled, cut into large pieces except tomatoes. Mix 6 to 8 sec. speed 3.5. Then, pour half of the mixed vegetables in the simmering basket.

- In the other half remaining in the bowl add the tomatoes, seasoning and 3 cups of water.

- Place basket in bowl and program 18 mins at 100°C-202 speed 1.

- At the end of cooking, pour the contents of the basket into the bowl, add the butter and mix for 1 min at Turbo speed.

- Depending on the desired taste, top up with water, and homogenize a few seconds speed 4. The velouté is ready.
