Roulé de filet de truite vapeur au jus de carottes
4 whole trout filleted + salt + pepper + herbs
Carrot juice sauce: 1 ½ cup carrot juice + parsley ginger + 1 tbsp thick cream 35% + 20 cl white wine + 2 shallots
* Cut each fillet lengthwise to obtain 2 strips, salt, add some chopped herbs; roll each strip tightly and put them in the simmering basket.
* In the bowl, pour the sauce ingredients, place the basket in the bowl and program 10 mins 100° speed 3.
* Place the roll in the center of the plate, pour 1 to 2 tbsp of sauce around Fish.
