300 g (0,66 lbs) dry white black-eyed beans

 1 large onion

 3 cloves of garlic

 1 tsp fine salt

 ½ bird's eye chili or 1 pinch of cayenne pepper (optional)

 ½ packet of baking powder

Soak the beans for about 2 hours to soften them.

Taste them cold or hot as an aperitif and often with spicy tomato sauce and concentrated.

(black-eyed beans are like navy beans, smaller than chickpeas but with a black spot hence their name black-eyed beans)
