STEAK D'AUTRUCHE AU POIVRE VERT



Sear the salted, peppery steak in hot butter. Keep the meat rare. Exit the steak, de-glaze with a little dry white wine.

Add 1 tbsp green pepper and 2 tbsp of cream. Thicken. Spread the steak.
