Matelote

Matelote is a popular French fish dish made with freshwater fish such as eel, salmon, and carp, a fish stock, and the best red or white wines. The name Matelote means sailor in French.

While not as popular as the bouillabaisse, a similar dish that uses saltwater fish, it does have several regional variations, such as the matelote Normande, which uses hard cider instead of wine. It is recommended to serve matelote with some boiled potatoes, salad and a crispy baguette on the side.
