The best thing is to take the meat out of the fridge and leave it alone until it comes to room temperature. If you're in a hurry, though, you can heat it up in the microwave. Salt is sprinkled on both sides of the meat that has come to room temperature and ground black pepper is poured from the mill (don't even try to ground black pepper). In fact, black pepper will burn when you throw the meat into the pan, but for some reason, all famous chefs use black pepper at this point. We also use it out of respect for the masters.

We take our iron pan to the stove and cook at the highest temperature for 10 minutes. waiting for it to warm up. Throw a teaspoon of water on it to realize that it has reached the highest possible temperature, if the water evaporates in an instant, your pan is ready. If you are aware that we did not oil the pan, there is no need, because the meat will not stick.

Spread the meat evenly in the pan. Don't worry if the world has turned into a battlefield, the sounds of explosions herald that victory is near. Do not try to move the meat, check if it is cooked, or press on it. Be patient for 4-5 minutes. If you wait for 4 minutes, it will be under-cooked, if you wait for 5 minutes, it will be well cooked. Turn the meat with the help of tongs for the time you desire and cook the other side for 4-5 minutes.

Here's the trick: Take the meat out of the pan and place it on aluminum foil. Now grind the desired amount of black pepper on both sides, wrap with foil and leave to rest.

At least 5 min. After resting, carefully open the foil, it contains very valuable broth so that it does not go to waste.

Transfer the meat to the serving plate and pour the broth remaining in the foil over it.

A green salad is recommended to be prepared with only lettuce and lettuce and crowned with extra virgin olive oil and freshly squeezed lemon juice.
