Saumon crémeux sauté


  • 4 slices of salmon fillet
  • 3 tablespoons of olive oil
  • 2 cloves of garlic (finely chopped)
  • Salt
  • 1 tablespoon of butter
  • 200 ml ( 6,76 oz) cream
  • 5 sprigs of dill (finely chopped)
  • Grated rind of 1 lemon
  • 1 teaspoon lemon juice
  • Freshly ground black pepper
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon red pepper flakes

Place the non-stick, preferably cast iron pan on the stove. When the pan is hot, fry the salmon fillets with olive oil for 5 minutes on each side.
Remove the salmon fillets from the pan and set aside.
Melt the butter in the same pan. Add the garlic and flour and mix. Then add the cream and grated lemon peel and mix quickly.
Add freshly ground black pepper, lemon juice and dill and mix again. Place the salmon fillets that you have kept on the side in this sauce.
Cook for a few minutes and remove from the stove. Serve with a sprinkle of grated Parmesan cheese and chili peppers.
