Soupe verte aux pommes de terre


  • 1 handful of broccoli
  • 1/2 bunch of spinach
  • 2 medium potatoes
  • 1 medium onion
  • 1 + 1/4 liters of hot water
  • 1 tablespoon of olive oil
  • Salt, pepper

Take the coarsely chopped onion, spinach and broccoli into the soup pot. Add olive oil and fry on low heat. Add salt and pepper.
Add the water and boil it on low heat for 10-15 minutes with the lid of the pot half closed.
Add the coarsely chopped potatoes and boil for another 10-15 minutes. Blend and serve hot.
Service recommendation
Serve with crunchy bagel slices, strained yoghurt whipped to the consistency of cream, pomegranate and fresh thyme. You can also serve it with cornbread if you wish.
