COULIS DE TOMATE

 



  • 7 medium tomatoes
  • 1 tablespoon full of margarine or butter
  • 1 small onion finely chopped
  • 1 clove of garlic finely chopped
  • 1/2 bay leaf
  • 1/4 teaspoon salt
  • 1 pinch granulated sugar


Carve out the stems of the tomatoes with the nose of the knife.

Put water in a pot and bring it to a boil, immerse the tomatoes in boiling water for a minute and remove them (This is for easy peeling)

Then peel the skins of the tomatoes and cut them in half horizontally.

Gently squeeze out the seeds, discard and finely chop the tomatoes

Heat oil in a small saucepan

Add the onion, fry for a minute, add the tomatoes and all the remaining ingredients, cook for ten to twelve minutes over low heat, stirring from time to time, remove from the heat, pass through a puree grinder or strainer and serve.
